The impacts of our food on the planet and our health are increasingly demonstrated. While the agro-industrial model has long allowed access to a varied diet at an affordable price for all, the limits of these practices are now at the heart of multiple questions about the price to pay for this result. Greenhouse gas emissions, water and soil pollution, erosion of biodiversity, obesity and diseases linked to ultra-processed food, imbalances in the distribution of value added, or the growing difficulties of low-income populations to feed themselves properly. The evils of the agro-industrial system call for radical solutions that struggle to be implemented despite expectations. Despite increasing progress and citizen initiatives, the inertia of production and marketing systems, as well as consumer behaviour, are challenging our ability to move towards more sustainable food.
In the face of climate change and the increasing vulnerability of agricultural and food systems, controversy is rife and the proposed solutions are debated as to their ability to feed the planet in the future. Can we maintain our diets and related agricultural practices? How much for animal products and plants? Can we eat 100% organic and local? What future for the French culinary tradition? What hope can we give to technological food?
Les impacts de notre alimentation sur la planète et notre santé sont chaque jour davantage démontrés. Si le modèle agro-industriel a permis un accès à une alimentation variée à un prix abordable pour tous, les limites de ces pratiques sont aujourd’hui au cœur d’interrogations multiples quant au prix à payer pour ce résultat. En dépit de progrès et d’initiatives citoyennes , l’inertie des systèmes de production et de commercialisation, mais aussi les comportements des consommateurs interrogent notre capacité à aller vers une alimentation plus durable. Face aux changements climatiques et à la vulnérabilité croissante des systèmes agricoles et alimentaires, les controverses sont vives et les solutions proposées font débat quant à leur capacité à nourrir la planète dans le futur. Pouvons-nous maintenir nos régimes alimentaires et les pratiques agricoles qui y sont liées ? Peut-on manger 100% bio et local ? Quel espoir accorder à l’alimentation technologique ?
